Is canvas better than paper for abstract art prints?

Canvas suits painterly abstracts particularly well because its slight weave echoes the surface of a real painting, which reinforces the brushstroke effect. Paper prints behind glazing tend to look crisper and more graphic, and they reflect more light. If you want the piece to read as a painting on the wall rather than a poster, canvas is usually the easier choice.

Should I hang one large canvas or a set of smaller ones?

A single large canvas is the simplest way to anchor a sofa, bed or mantel, and painterly work in particular benefits from scale because the brushwork has room to breathe. A set of two or three coordinated pieces stretches across a wider wall and suits hallways or long walls, but it needs consistent spacing to look deliberate. If you're unsure, one bigger piece is generally more forgiving.
